The First 5000

I imagine a world where every chef is the master of their own destiny. I know it sounds cheesy but there’s no other way to say it.

The world I see is one in which every chef earns the living they deserve through their wages but also through sponsorship deals and collaborations. I see a world where all chefs are celebrated not just the ones on tv. Where people come to restaurants because they follow the chefs and the cooks who work there.

I imagine a world where the creators of the food hold the leverage not the owners of the restaurants.
The world I see is much different than the one that we currently live in. But it’s not far off.

The world I imagine is not impossible, it’s inevitable.

Through the use of the tools available to us today, we can change the whole industry. We can take the control away from owners that don’t care about us or the quality of the food. We take ownership of the industry that we love but that is next to impossible to survive in.

I imagine this world not because I am some ideologue who has dreamed a dream but because I know it is coming. I know it is right there in front of us and all we have to do is reach out and grab it. All we have to do is embrace what is already in front of us.

I believe that there is an opportunity to claim a new future for us and everyone who will come up behind us. I believe that there is a choice in front of us all. And I believe that doing nothing is a choice.

Do I believe that this industry, our industry, is the best it can be? Do I believe that myself and all the people I have worked with over the course of my career have been treated entirely fairly? Do I believe that when I work fourteen consecutive days or eighteen-hour shifts that the person who I work for appreciates it? Do I believe that there is a better way? These are the questions I ask myself.

What I have realized as I’ve grown older is that I have worked more in eighteen years in this industry than most people will work in their entire life. And for what? I have worked not for a pay cheque, or for an owner. I have worked because I love it and because of the people who were working right there with me. I have bled, I have cried, I have been broken down, and I have been beaten. Why? Because in those moments there is nothing else. There is us and there is them and we stand together always. No matter what.

I love so much about this industry. But I think it can be better. I think we can do better.

I believe in the power of social media to enact change.
And I believe that if a group of chefs and cooks who work together in a restaurant collectively have more of a following than the restaurant itself then they hold the power. I know that if we build big enough followings companies will approach us with sponsorship deals and that we can subsidize our incomes this way.

I don’t have all of the answers. I have a vision of the future and I know what I have to do to get there. But all of us have to find our own paths. I do know is that there is a key that opens the door to all of this. There is one key that paves the way for the future that I see coming. The key is people.

In the past six months, I have built a real following from zero to five thousand on Instagram. These are people who interact with me. They confide in me. They seek me out for help. These are real followers. This is the key.

I can’t tell you exactly how to build your following. But what I can do is tell you how I have built mine. I can tell you about the things I did right and the things I did wrong. I can tell you about the successes and the failures. I can tell you about all of the things I have learned over the past six months in hopes that you can take those things and use them to work towards the vision I see of the future. I can tell you how I got my First 5000.
