Okay, so this is my go-to on those nights when I literally cannot deal with a sink full of dishes.
You just toss chicken and whatever veggies are in your fridge onto a sheet pan, drizzle everything with lemon and garlic (the holy combo, am I right?), and forget about it for 25 minutes.
I've made this at least a dozen times and my partner still thinks I'm fancy.

Listen, I'm obsessed with this recipe. Last week I had exactly zero motivation to cook and this saved me from ordering expensive mediocre takeout again.

10.Margherita Flatbread Pizza
Can we talk about how store-bought naan is a total game-changer?
I keep it stocked in my freezer specifically for nights like this. You top it with sauce and fresh mozzarella, bake it for like 8 minutes, and suddenly you're eating homemade pizza without any of the dough-making stress.
Add that balsamic drizzle at the end and you'll feel like you're at a fancy pizzeria.
