Every Thanksgiving, my oven turns into the most contested piece of real estate in the house.

The turkey owns it for hours. Then the rolls need a turn, and somebody always wants a pie in there too.

So a few years back I stopped fighting for oven space and started making my pumpkin cheesecake in the fridge instead.

It sets up creamy, sliceable, and honestly lighter than the baked kind.

No water bath. No cracks down the middle. No praying it doesn't sink.

I make it the night before, tuck it on a shelf next to the cranberry sauce, and forget about it until dessert.

The texture is somewhere between a classic cheesecake and a pumpkin mousse, soft and cool with real fall spice in every bite.

My wife swears she likes it better than the baked version, and after a few years of testing I think she's right.

The one trick that makes or breaks it is blotting the pumpkin, and I'll walk you through exactly why.

Make it once and it earns a permanent spot on your fall table.

Why You'll Love This No-Bake Pumpkin Cheesecake

This is the pumpkin dessert that frees up your oven. Here's why it stays in my rotation all season.

  • No oven required. The whole thing sets in the fridge, so it never competes with the turkey.
  • Make-ahead friendly. It actually tastes better the next day, which makes holiday prep so much easier.
  • Mousse-like texture. Light, cool, and creamy, not dense and heavy like some baked cheesecakes.
  • Real fall spice. Pumpkin pie spice plus extra cinnamon gives it that cozy, warm flavor.
  • No cracks, no water bath. All the payoff of cheesecake with none of the stress.

Ingredients You'll Need

The ingredient list is short and mostly pantry staples. A few smart choices make all the difference between a firm slice and a runny mess.

For the Crust

  • Graham cracker crumbs (2 cups). The classic base. I like to swap in gingersnap crumbs when I want a spicier, more grown-up crust.
  • Granulated sugar (¼ cup). Sweetens the crust and helps it hold together.
  • Cinnamon (½ teaspoon). A little warmth right in the base.
  • Unsalted butter (6 tablespoons, melted). The glue that binds the crumbs into a firm, pressable crust.

For the Filling

  • Cream cheese (16 ounces, softened). Use full-fat brick-style cream cheese, not the spreadable tub kind. Low-fat or whipped cream cheese will not set.
  • Pumpkin puree (1 cup, blotted). Pure canned pumpkin, NOT pumpkin pie filling. Blotting it dry is non-negotiable.
  • Powdered sugar (¾ cup). Dissolves smoothly for a silky filling with no grit.
  • Brown sugar (2 tablespoons). Adds a little molasses depth behind the spice.
  • Pumpkin pie spice (2 teaspoons). The heart of the flavor. Store-bought or homemade both work.
  • Cinnamon (½ teaspoon). Because I always want a touch more.
  • Vanilla extract (1 teaspoon). Rounds everything out.
  • Heavy whipping cream (1 cup). Whipped to stiff peaks and folded in for that airy, mousse-like lift.

How to Make No-Bake Pumpkin Cheesecake

Two simple parts: the crust and the filling. Neither one needs the oven, and the whole thing comes together in about twenty minutes of hands-on work.

Make the Crust

Stir the graham crumbs, sugar, and cinnamon together in a bowl.

Pour in the melted butter and mix until it looks like wet sand.

Press it firmly into the bottom and slightly up the sides of a 9-inch springform pan.

Use the flat bottom of a measuring cup to pack it down tight.

Pop it in the freezer while you make the filling.

Make the Pumpkin Filling

Blot the pumpkin first. Spread it on paper towels and press out as much liquid as you can, changing the towels a few times.

This is the single most important step, so don't skip it.

In a separate bowl, whip the heavy cream to stiff peaks, then set it aside.

Beat the softened cream cheese with the powdered sugar, brown sugar, spices, and vanilla until totally smooth.

Scrape the bowl so there are no lumps hiding at the bottom.

Mix in the blotted pumpkin until the color is even.

Now gently fold in the whipped cream with a spatula, going slowly so you don't knock the air out.

Stop when you no longer see white streaks.

Chill and Set

Spread the filling over the chilled crust and smooth the top.

Cover and refrigerate for at least 6 hours, or overnight if you can swing it.

Patience pays off here. A properly chilled cheesecake slices clean, a rushed one slumps.

Tips for the Best No-Bake Cheesecake

A few small habits guarantee a firm, sliceable cheesecake every time.

  • Blot the pumpkin hard. Canned pumpkin is full of water, and that water is the enemy of a firm set. I blot mine three or four times.
  • Use brick cream cheese. Full-fat, block-style only. The soft tub stuff has too much moisture to set up.
  • Soften the cream cheese first. Room-temperature cream cheese beats smooth. Cold cream cheese leaves lumps you can't fix later.
  • Don't over-fold. Fold the whipped cream in gently. Beating it in deflates the airy texture that makes this special.
  • Chill fully. Six hours minimum. This is not the dessert to rush.

Serving and Storage

This cheesecake keeps beautifully, which is half the reason I love it.

  • Serving. Top with extra whipped cream and a dusting of cinnamon. A drizzle of caramel is fantastic if you want to dress it up.
  • Slicing. Use a thin, sharp knife and wipe it clean between cuts for tidy slices.
  • Make-ahead. Build it up to a day in advance and keep it covered in the fridge. It only gets better.
  • Fridge. Stores well, covered, for 4 to 5 days.
  • Freezer. Wrap it well and freeze up to a month. Thaw overnight in the fridge before serving.

Ingredients

For the Crust

  • 2 cups graham cracker crumbs or gingersnap crumbs
  • ¼ cup granulated sugar
  • ½ teaspoon cinnamon
  • 6 tablespoons unsalted butter melted

For the Filling

  • 16 ounces cream cheese brick-style, full-fat, softened
  • 1 cup pumpkin puree pure, blotted dry
  • ¾ cup powdered sugar
  • 2 tablespoons brown sugar
  • 2 teaspoons pumpkin pie spice
  • ½ teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream whipped to stiff peaks

Instructions

Make the Crust

  • Stir the graham cracker crumbs, granulated sugar, and cinnamon together in a bowl. Pour in the melted butter and mix until it looks like wet sand.
  • Press the mixture firmly into the bottom and slightly up the sides of a 9-inch springform pan, packing it down tight with the flat bottom of a measuring cup. Place in the freezer while you make the filling.

Make the Filling

  • Spread the pumpkin puree on paper towels and press out as much liquid as possible, changing the towels a few times. This step is essential for a firm set.
  • In a separate bowl, beat the heavy cream to stiff peaks and set aside.
  • Beat the softened cream cheese with the powdered sugar, brown sugar, pumpkin pie spice, cinnamon, and vanilla until completely smooth, scraping the bowl so there are no lumps.
  • Mix in the blotted pumpkin until the color is even. Gently fold in the whipped cream with a spatula until no white streaks remain, being careful not to deflate it.

Chill and Set

  • Spread the filling over the chilled crust and smooth the top. Cover and refrigerate at least 6 hours, or overnight, until firm and sliceable.
  • Serve topped with extra whipped cream and a dusting of cinnamon. Slice with a thin, sharp knife, wiping it clean between cuts.

Notes

  • Blot the pumpkin: Canned pumpkin holds a lot of water. Blot it three or four times so the filling sets firm instead of runny.
  • Cream cheese matters: Use full-fat brick-style cream cheese, softened to room temperature. Spreadable or low-fat cream cheese will not set.
  • Gingersnap swap: Trade the graham crumbs for gingersnap crumbs for a spicier crust.
  • Storage: Keeps covered in the fridge 4 to 5 days, or wrapped in the freezer up to a month. Thaw overnight in the fridge.
