Ingredients
Yogurt Layer

plain Greek yogurt
full-fat or 2%

honey or maple syrup

vanilla extract

Applesauce Layer

unsweetened applesauce
store-bought or homemade

ground cinnamon
Crunch Layer

Instructions
Make the Parfaits
In a small bowl, stir together the Greek yogurt, vanilla extract, cinnamon, and honey or maple syrup (if using).
In another small bowl, mix the applesauce with ¼ teaspoon cinnamon.
Spoon about ⅓ of the yogurt mixture into the bottom of each glass or mason jar.
Add a layer of cinnamon applesauce (about 2 to 3 tablespoons per layer).
Repeat with another layer of yogurt and another layer of applesauce.
Top each parfait with granola and chopped nuts. Serve immediately.
Notes
Make ahead:
Assemble yogurt and applesauce layers the night before. Add granola right before eating to keep it crunchy.
Storage:
Assembled parfaits (without granola) keep in the fridge for up to 2 days.
Homemade applesauce:
Dice 2 apples, cook with ¼ cup water, ½ teaspoon cinnamon, and 1 teaspoon maple syrup for 15 to 20 minutes. Mash and cool.
Vegan option:
Use dairy-free Greek-style yogurt and plant-based granola.
Dessert version:
Swap granola for crushed graham crackers and top with whipped cream.
