Applesauce Pudding

Instructions
Make the Pudding
Preheat oven to 350°F. Grease an 8x8-inch baking dish with butter.
In a large bowl, whisk eggs and sugar until smooth and slightly frothy.
Add applesauce, melted butter, and vanilla. Whisk to combine.
Whisk in cinnamon, nutmeg, ginger, and a pinch of salt.
Pour mixture into the prepared baking dish.
If using the topping, mix 2 teaspoons sugar and ¼ teaspoon cinnamon together and sprinkle over the surface.
Bake for 35-40 minutes until the top is golden and set. The center should be firm with a slight wobble.
Serve warm, scooped into bowls. Top with whipped cream, vanilla ice cream, or a drizzle of caramel sauce.
Notes
Not bread pudding:
This is a baked custard, not a bread pudding. There is no bread in this recipe.
Chunky applesauce:
If using chunky applesauce, blend it smooth first for the best texture.
Unsweetened applesauce:
Use unsweetened to control the sweetness level. If using sweetened, reduce sugar to ¼ cup.
Storage:
Cover and refrigerate up to 3-4 days. Reheat in the microwave for 30-45 seconds per serving.
Freezing:
Portion and freeze for up to 2 months. Thaw in the fridge overnight.
