No-Bake Sweet Potato Cheesecake Bars
Three cold layers: a buttery graham crust, a light cream cheese filling, and a spiced sweet potato top. No oven needed, the fridge sets it.

For the Crust

For the Cheesecake Layer

For the Sweet Potato Layer

cooked mashed sweet potato
cooled completely

Instructions
Make the Crust
Line an 8x8 or 9x9 pan with parchment, leaving an overhang on two sides.
Stir the graham crumbs and brown sugar together, then mix in the melted butter until every crumb is damp.
Press firmly into the pan with the flat bottom of a glass and chill 20 minutes. For a firmer base, bake at 350°F for 10 minutes and cool completely.
Make the Cheesecake Layer
Beat the softened cream cheese alone for 2 minutes, until completely smooth.
Add the powdered sugar and vanilla and beat until light.
Fold in the whipped topping with a spatula, stopping as soon as no white streaks remain.
Make the Sweet Potato Layer
Beat the 4 ounces of cream cheese smooth, then add the cooled mashed sweet potato, sugar, cinnamon, nutmeg, and vanilla.
Mix until the color is even, then taste and adjust the sugar and cinnamon.
Layer and Chill
Spread the cheesecake layer evenly over the chilled crust and refrigerate 30 minutes.
Spread the sweet potato layer over the top, working gently from the center outward.
Cover and refrigerate at least 4 hours, ideally overnight.
Lift out by the parchment, slice with a hot dry knife wiped between cuts, and dust with cinnamon before serving.
Notes
Truly no-bake:
The crust can be chilled instead of baked if you want to keep the oven off entirely.
Soften the cream cheese:
Lumps in the bowl stay lumps in the finished bar.
Chill between layers:
30 minutes keeps the two fillings distinct.
Clean cuts:
Hot water, dry blade, one cut per dip.
