pumpkin puree
not pie filling

semi-sweet chocolate chips
¼ cup reserved for the top
Instructions
Preheat the oven to 350 degrees F and grease or line a 9x13 pan.
Beat the softened butter with the brown and white sugar until light and fluffy. Beat in the egg and vanilla until smooth.
Mix in the pumpkin puree until fully combined.
Add the flour, baking soda, pumpkin pie spice, cinnamon, and salt. Stir just until the flour disappears, then fold in most of the chocolate chips.
Spread the batter evenly into the pan and press the reserved chips over the top.
Bake 28 to 32 minutes, until a toothpick comes out with a few moist crumbs. Cool completely in the pan before cutting into squares.
Notes
Blot the pumpkin:
Pressing the puree with a paper towel keeps the bars soft, not gummy.
Do not overbake:
Pull them at the first clean-ish toothpick. They firm up as they cool.
Cool before cutting:
Cool bars slice into clean squares.
