Instructions
Roast and Chill
Bake whole sweet potatoes at 400F for 45 to 55 minutes until they slump and leak syrup. Cool, scoop out the flesh, and refrigerate at least 2 hours. Warm puree makes a soupy bowl.
Blend Thick
Pour the measured milk into the blender first, then add the dates, almond butter, chilled sweet potato, cinnamon, nutmeg, vanilla and salt. Add the frozen banana pieces last.
Blend on high for 60 to 90 seconds, working the tamper down through the mixture and scraping the sides twice. Do not add more milk unless the blade genuinely cannot move, and then only 1 tablespoon at a time.
Check the thickness: a spoon stood upright in the middle should stay put for 2 to 3 seconds before it leans.
Spoon the mixture into two bowls rather than pouring it, and level the surface flat, filling each bowl about two thirds so there is room for the toppings.
Arrange the granola, sliced banana, pecans and coconut in bands across the surface and eat straight away, before it softens.
Notes
Chill the sweet potato: at least 2 hours. Warm puree is the fastest way to a runny bowl.
Measure the milk: half a cup. Add more only by the tablespoon, and only if the blade cannot move.
Use the tamper: most thin bowls are impatience, not a bad recipe.
No ice: it thickens briefly and then dilutes everything.
Fill two thirds: toppings need somewhere to sit, and a rim of bowl showing keeps them from sliding off.
Eat it immediately: it softens within a few minutes at room temperature.
