Every fall I get roped into bringing dessert, and for years my default was a pumpkin pie.

Rolling out the crust, crimping the edge, praying the custard didn't crack.

Then I'd slice it and the whole thing would slump.

One October I gave up on the pie and pressed a buttery base into a pan instead.

I spread a spiced pumpkin layer over it, poured a soft caramel on top, and let the whole thing chill.

Those squares disappeared before the coffee was even poured.

Now this is what I bring, and nobody misses the pie.

The base tastes like shortbread, the pumpkin layer stays custardy, and that caramel sets soft without turning into a sticky mess.

I make a pan at least twice every fall, once for us and once for whoever asks.

What I love is how forgiving it is. No crust to roll, no water bath, no cracking.

You mix three layers, bake, chill, and cut. That's it.

Ingredients You'll Need

Everything here is pantry-standard fall baking stuff. A few notes on what matters and why.

For the base:

  • Unsalted butter (¾ cup, melted). Melted butter means no mixer and a sturdy, shortbread-like press-in base.
  • Brown sugar (1 cup, packed). I use dark brown for a deeper, almost caramel note in the crust.
  • All-purpose flour (2 cups). The backbone of the base. Spoon and level it so the bars don't turn dry.
  • Baking powder (½ teaspoon). Just a touch of lift so the base isn't a brick.
  • Salt (½ teaspoon). Balances all that sugar.
  • Ground cinnamon (1 teaspoon). Warms up the base before the pumpkin even shows up.

For the pumpkin layer:

  • Canned pumpkin puree (1 cup). Use pure pumpkin, NOT pumpkin pie filling, which is pre-sweetened and pre-spiced.
  • Granulated sugar (½ cup). Keeps the pumpkin layer sweet but not cloying.
  • Egg (1 large). Sets the pumpkin into a soft custard so it slices clean.
  • Pumpkin pie spice (2 teaspoons). The shortcut to that classic fall flavor in one jar.
  • Vanilla extract (1 teaspoon). Rounds out the spice.

For the caramel top:

  • Unsalted butter (½ cup). Brown it first for a nutty flavor you can't get any other way.
  • Brown sugar (1 cup, packed). The body of the caramel.
  • Heavy cream (¼ cup). Smooths the caramel and helps it set soft instead of hard.
  • Salt (½ teaspoon). A little salt keeps the caramel from being one-note sweet.

How to Make the Pumpkin Caramel

This caramel is the piece people ask about, and it's genuinely easy. No candy thermometer, no melting sugar until it smokes.

Melt the ½ cup butter in a small saucepan over medium heat and keep cooking it until it smells nutty and turns golden.

That's brown butter, and it takes about 4 to 5 minutes.

Stir in the 1 cup brown sugar and ¼ cup heavy cream.

Let it bubble gently for 2 minutes, stirring, until it looks glossy and slightly thickened.

Pull it off the heat and stir in the salt.

Ready when it coats the back of a spoon. It thickens more as it cools, so don't overcook it.

How to Make Pumpkin Caramel Bars (Step by Step)

Make the base

Heat your oven to 350°F and line a 9x13 pan with parchment, leaving overhang on the sides.

Stir the melted butter, brown sugar, flour, baking powder, salt, and cinnamon together until it clumps.

Press it firmly and evenly into the pan.

Mix the pumpkin layer

Whisk the pumpkin, granulated sugar, egg, pumpkin pie spice, and vanilla until smooth.

Spread it over the pressed base in an even layer.

Layer and bake

Bake for 30 to 35 minutes, until the pumpkin layer is set and no longer wobbly in the center.

Let the pan cool on a rack while you make the caramel.

Add the caramel and chill

Pour the warm caramel over the cooled bars and spread it to the edges.

Chill the pan for at least 2 hours so the caramel sets soft and matte.

Lift out with the parchment and cut into 16 squares.

  • Chill before cutting. Warm caramel smears. A cold pan gives you clean, bakery-style edges.
  • Room-temp egg. It blends into the pumpkin without streaks.
  • Wipe the knife between cuts. One quick wipe keeps every square sharp.
  • Don't overcook the caramel. Pull it at the 2-minute bubble or it sets hard and chewy.

  • Fridge. Store covered up to 5 days. They firm up nicely and cut even cleaner cold.
  • Freezer. Freeze cut squares in a single layer, then bag them for up to 3 months.
  • Serving. Let them sit out for 15 minutes so the caramel softens before you serve.

Do I have to chill the bars before cutting?

Can I use pumpkin pie filling instead of pure puree?
