Nothing pulls my family out of bed on a cold Saturday like the smell of caramel bubbling under a pan of pumpkin rolls.

It's warm, buttery, a little toasty from the pecans, and it fills the whole house.

By the time I flip the pan over, my kids are already hovering with plates.

I started making these a few Octobers back, mostly because I had half a can of pumpkin staring at me from the fridge.

Now they're a standing request every fall weekend.

What sold me was how much pumpkin goes into one batch: the dough and the filling together use up a whole can, so nothing gets shoved to the back of the shelf.

The dough turns out soft and spiced, almost like a pumpkin cinnamon roll, but the sticky pecan glaze on the bottom is what makes them sticky buns.

Most recipes skip the one thing that matters: let the pan rest before you flip it, and the caramel sets into a glossy, chewy glaze instead of a runny puddle.

They take a little time, sure, but most of it is the dough rising while you go about your morning.

Make them once and you'll be planning the next batch before the pan is even empty.

Ingredients You'll Need

Everything here is pantry-standard for fall baking. A few components, but nothing fussy.

For the pumpkin dough:

  • Whole milk (1 cup), warmed to 110°F. Warm, not hot, or you'll kill the yeast.
  • Active dry yeast (2 ¼ teaspoons). One standard packet. Instant works too.
  • Granulated sugar (⅓ cup). Feeds the yeast and lightly sweetens the dough.
  • Pumpkin puree (¾ cup). Pure pumpkin, NOT pumpkin pie filling.
  • Egg (1 large), room temperature. Adds richness and structure.
  • Unsalted butter (4 tablespoons), softened. For a tender crumb.
  • Pumpkin pie spice (1 tablespoon). That warm cinnamon-ginger-nutmeg backbone.
  • Salt (¾ teaspoon). Balances all the sweetness.
  • All-purpose flour (4 to 4 ½ cups). Add it to feel, since pumpkin makes the dough wetter than usual.

For the pecan caramel topping:

  • Unsalted butter (½ cup). The base of the glaze.
  • Brown sugar (¾ cup), packed. Gives that deep caramel flavor.
  • Maple syrup (¼ cup). Use real maple syrup, not pancake syrup.
  • Salt (¼ teaspoon). Keeps the caramel from being cloying.
  • Chopped pecans (1 cup). Walnuts work in a pinch.

For the pumpkin-spice filling:

  • Unsalted butter (¼ cup), softened. Spread easily over the dough.
  • Brown sugar (½ cup), packed. Melts into the swirl as it bakes.
  • Ground cinnamon (1 ½ teaspoons). The star spice in the swirl.
  • Pumpkin pie spice (½ teaspoon). Rounds out the warmth.

How to Make Pumpkin Sticky Buns

Don't let the yeast dough scare you off. If I can pull it off, so can you.

Make the Pumpkin Dough

Stir the yeast and a teaspoon of the sugar into the warm milk and let it sit for 5 minutes until foamy.

No foam means dead yeast, so start over with a fresh packet.

Beat the butter, remaining sugar, egg, and salt until smooth, then mix in the pumpkin puree and the foamy yeast.

The mixture looks a little curdled at this point, which is totally normal.

Add the flour and pumpkin pie spice a bit at a time, kneading until the dough pulls away from the bowl and feels soft and tacky.

First Rise

Drop the dough into a greased bowl, cover it, and let it rise in a warm spot for about 1 hour, until doubled.

This is your window to make the caramel and the filling.

Make the Pecan-Caramel Pan Topping

Melt the butter, brown sugar, maple syrup, and salt together over medium heat, stirring until smooth, about 3 to 4 minutes.

Stir in the pecans, then pour it all into a greased 9x13-inch baking dish and spread it evenly across the bottom.

Mix the Pumpkin-Spice Filling

Beat the softened butter, brown sugar, cinnamon, and pumpkin pie spice into a spreadable paste.

That's the whole filling. Easy.

Roll, Fill, and Shape the Buns

Punch down the risen dough and roll it into a 24x18-inch rectangle on a lightly floured counter.

Spread the filling to the edges, leaving a 1-inch margin along one long side to seal.

Roll it up tightly from the covered long edge, pinch the seam shut, and slice into 12 even rolls.

Nestle the rolls cut-side up right into the caramel in the pan.

Second Rise and Bake

Cover and let the rolls rise again for 45 minutes, just until puffy.

Keep this rise short so they don't overproof and deflate.

Bake at 350°F for 35 to 40 minutes, until golden and set through the center.

Invert and Cool

Let the pan rest 10 minutes, then flip it onto a platter and leave it upside down for another 5 minutes so the glaze drips down over the tops.

That short rest is what turns the caramel glossy and chewy instead of runny.

Lift the pan away and dig in!

Make-Ahead and Overnight Instructions

This is my favorite trick for holiday mornings. Do the work the night before and wake up to fresh buns.

  • Shape and refrigerate. Arrange the sliced rolls in the caramel, cover the pan tightly, and chill overnight.
  • Bake from cold. Set the pan in a cold oven, then turn it to 350°F and bake about 25 to 30 minutes, until golden and 190°F in the center.
  • Freeze the dough. You can freeze the dough after the first rise for up to 2 months and thaw it in the fridge overnight.

Tips for the Best Sticky Buns

A few small things make a big difference here. These are the notes I wish I'd had my first time.

  • Add flour to feel, not by the cup. Pumpkin puree varies in moisture, so stop adding flour once the dough is soft and only slightly tacky.
  • Don't skip the rest before flipping. Give it the full 10 minutes so the caramel thickens and clings.
  • Spread the caramel evenly. A level layer means every bun gets its share of pecans and glaze.
  • Use pure pumpkin. Pie filling is pre-sweetened and spiced, and it throws off the whole recipe.

Storage and Freezing

These keep well for a few days if they last that long. Mine rarely do.

  • Room temperature. Store in an airtight container for up to 3 to 4 days.
  • Reheat. Microwave a bun for 20 seconds to bring back that fresh-baked softness.
  • Freeze baked buns. Cool completely, then freeze in an airtight container for up to 2 months. Thaw at room temperature and reheat.

Frequently Asked Questions

Can I make pumpkin sticky buns ahead of time?

Yes. Shape the buns, arrange them in the caramel, cover the pan, and refrigerate overnight. Bake them straight from cold in the morning, adding a few extra minutes.

Why is my dough so sticky?

Pumpkin adds a lot of moisture. Add flour gradually until the dough pulls away from the bowl and feels soft and only slightly tacky. Resist dumping in extra all at once or the buns turn dense.

Can I use pumpkin pie filling instead of puree?

No. Pie filling is already sweetened and spiced, which throws off the sugar and texture. Use pure pumpkin puree.

What can I use instead of pecans?

Walnuts are the easiest swap. Hazelnuts or almonds also work, or leave the nuts out entirely for a smooth caramel glaze.

How do I store and reheat leftovers?

Keep them in an airtight container at room temperature for 3 to 4 days. Warm a bun in the microwave for about 20 seconds before serving.

Can I freeze them?

Yes, both baked and unbaked. Freeze baked buns for up to 2 months and reheat, or freeze the shaped rolls before the second rise and thaw in the fridge before proofing and baking.

  • ¼ teaspoon salt
  • 1 cup pecans chopped

For the Pumpkin-Spice Filling

  • ¼ cup unsalted butter softened
  • ½ cup brown sugar packed
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon pumpkin pie spice

Instructions

Make the Pumpkin Dough
