A whole cheesecake used to scare me a little.

The springform pan that leaks. The water bath that sloshes. The crack that shows up right down the middle no matter how careful I am.

No springform. No water bath. No cracks to hide under whipped cream.

Just creamy, spiced pumpkin cheesecake I could slice into neat little squares.

My kids grab them straight from the fridge, and I never say no.

  • Graham cracker crumbs (1 ½ cups). The classic buttery base. Swap in gingersnap crumbs for a spicier crust.
  • Granulated sugar (2 tablespoons). Sweetens and helps the crust crisp.
  • Brown sugar (1 tablespoon). A little molasses depth in the base.
  • Unsalted butter (6 tablespoons, melted). Binds the crumbs into a firm, pressable crust.

For the Filling

  • Cream cheese (16 ounces, softened). Full-fat brick-style, not the spreadable tub kind. Room temperature beats smooth.
  • Granulated sugar (¾ cup). The main sweetness.
  • Brown sugar (¼ cup). Adds warmth behind the spice.
  • Sour cream (⅓ cup). A little tang and extra creaminess.
  • Vanilla extract (1 teaspoon). Rounds it all out.
  • Eggs (2 large, room temperature). They set the filling into a sliceable bar.
  • Pumpkin puree (¾ cup). Pure canned pumpkin, NOT pumpkin pie filling.
  • Pumpkin pie spice (2 teaspoons). The heart of the flavor.
  • Cinnamon (½ teaspoon). A touch more warmth.

How to Make Pumpkin Cheesecake Bars

Three easy stages: crust, filling, bake. A parchment sling makes lifting and cutting the bars foolproof.

Make the Crust

Heat the oven to 350°F and line an 8-inch square pan with parchment, leaving an overhang on two sides.

Stir the graham crumbs, both sugars, and melted butter together until it looks like wet sand.

Press it firmly and evenly into the bottom of the pan.

Bake for 8 to 10 minutes, then set aside to cool slightly.
