My aunt's Thanksgiving table always had two pumpkin pies, and I only ever reached for one of them.

The classic one sat there looking dense and heavy, and I'd take a polite sliver to be nice.

That second pie was a chiffon, and it changed how I think about pumpkin desserts for good.

It has all the cozy cinnamon and nutmeg you want in the fall, but the texture is soft and airy instead of thick and pasty.

I make it every November now, and it disappears faster than anything else I bring.

The secret is folding whipped egg whites into a spiced pumpkin base, so the whole thing turns light and mousse-like.

Best part? Once the crust is baked, the rest is a no-cook chill job.

I usually build it two days ahead so my oven is free for the turkey.

If you find regular pumpkin pie a little too rich, this is the version that wins you over. I promise it converts the skeptics.

What Is Pumpkin Chiffon Pie?

Chiffon pie is all about a light, airy filling. Instead of a dense baked custard, you fold whipped egg whites into a spiced pumpkin base that's been set with a little gelatin.

The result is soft, fluffy, and mousse-like, closer to a cloud than a slice of traditional pie.

How is it different from a cream pie? A cream pie gets its lightness from folded-in whipped cream, while a true chiffon leans on whipped egg whites for that airy lift.

And unlike classic pumpkin pie, the filling here isn't baked. You cook the base briefly on the stove for safety, then chill the assembled pie until it sets.

Ingredients You'll Need

Nothing here is fancy, and the spice rack does most of the work. Let's break it down by component.

For the Crust

  • Graham cracker crust (1 blind-baked 9-inch). I love a graham crust for the light, toasty crunch against the airy filling. A blind-baked pastry crust works too.

For the Chiffon Filling

  • Unflavored gelatin (1 envelope, about 2 ½ tsp). This is the heart of a chiffon. It holds everything together once chilled without making the pie taste like gelatin.
  • Cold water (¼ cup). For blooming the gelatin so it dissolves smoothly.
  • Granulated sugar (¾ cup, divided). Part goes into the pumpkin base, the rest sweetens the whipped whites.
  • Large eggs (3, separated). The yolks enrich the base, the whites get whipped for that airy lift.
  • Whole milk (½ cup). Thins the base without the heaviness of straight cream.
  • Pumpkin puree (1 can, 15 oz). Use pure pumpkin, NOT pumpkin pie filling, which is already sweetened and spiced.
  • Ground cinnamon (1 tsp), ginger (½ tsp), nutmeg (¼ tsp), cloves (⅛ tsp). The classic fall lineup.
  • Salt (½ tsp). Sharpens all the spice.
  • Vanilla extract (1 tsp). Rounds everything out.

For the Topping

  • Heavy cream (1 cup, whipped). A soft cloud of whipped cream on top is non-negotiable for me.
  • Cinnamon, for dusting. A light dusting for color and aroma.

How to Make Pumpkin Chiffon Pie

There's some downtime here, so read through the steps before you start. The active work is quick, but the chill is what sets the pie.

Step 1: Blind-Bake and Cool the Crust

Bake your crust and let it cool completely before the filling goes in.

A warm crust will melt the filling, so I get this done first.

Step 2: Bloom the Gelatin

Pour the ¼ cup cold water into a large bowl and sprinkle the gelatin over the top.

Let it sit and soften for 5 minutes.

Step 3: Cook the Pumpkin Base

In a saucepan, whisk together ½ cup of the sugar, the salt, all the spices, the egg yolks, milk, and pumpkin.

Cook over medium heat, stirring constantly, until it's hot and just starts to thicken, about 6 to 8 minutes.

Don't let it boil. If you want to be sure, an instant-read thermometer should hit 160°F for egg safety.

Pour the hot base over the bloomed gelatin and whisk until fully dissolved.

Step 4: Cool the Base

Let the mixture sit at room temperature until cool but not set, about 45 minutes.

Give it a stir halfway through so it doesn't firm up on you.

Step 5: Whip the Egg Whites

Beat the egg whites on high until foamy, about 1 to 2 minutes.

Slowly add the remaining ¼ cup sugar and the vanilla, then beat to stiff peaks, around 5 minutes.

Step 6: Fold It Together

Fold about a cup of the whites into the pumpkin base to lighten it.

Then fold in the rest in 4 to 5 batches, gently, until no white streaks remain.

Be gentle here. That folding is what keeps the pie light.

Step 7: Chill and Set

Pour the filling into the cooled crust and smooth the top.

Refrigerate until firm, at least 4 hours and ideally overnight.

Tips for Success

  • Fold, don't stir. Stirring deflates the whites and you lose the airy texture. Use a light hand.
  • Cook the base to 160°F. This makes the eggs safe and helps the filling set cleanly.
  • Bloom the gelatin fully. Undissolved gelatin leaves rubbery bits, so whisk it into the hot base until smooth.
  • Don't let the base set before folding. Catch it while it's cool but still pourable, or the whites won't fold in evenly.

Variations

  • Pastry crust. Swap the graham crust for a blind-baked flaky pie crust if that's your style.
  • Gingersnap crust. Crushed gingersnaps make a spicier, deeper base.
  • Extra orange zest. A couple teaspoons in the base adds a bright, citrusy punch.
  • Boozy whipped cream. A splash of bourbon in the topping is a great way to dress it up for adults.

Make Ahead & Storage

  • Make ahead. This pie actually gets better after a night in the fridge, so build it a day or two early.
  • Refrigerator. Cover tightly and it keeps for up to 5 days.
  • Freezer. Wrap well and freeze up to 3 months. Thaw overnight in the fridge, though the texture is fluffiest fresh.

Serving & Garnish Ideas

A swirl of whipped cream is the classic finish. Pile it on each slice and dust with a little cinnamon.

Sugared cranberries add a festive pop for the holidays.

For a pumpkin spice latte vibe, whip a little instant coffee into the cream. It hits the spot.
