Moist Pumpkin Pound Cake Loaf

Jump to Recipe Print Recipe

A good pound cake has a crumb so tight and buttery you can almost feel it before you taste it.

That's the texture I chase every fall.

pumpkin pound cake

Dense but tender, rich but not heavy, with a fine even grain that holds up to a thick slice.

Add pumpkin and warm spice, and the whole kitchen smells like October by the time it comes out of the oven.

I bake this in a plain loaf pan, not a bundt, so it slices into neat squares that pack into a lunch or sit next to a cup of coffee.

My wife likes hers plain. I go for the thin glaze on top.

Either way, it stays moist for days, which is the real magic of a pound cake made with sour cream and pumpkin.

It's one bowl, one pan, and no fancy technique.

The only trick is creaming the butter well and pulling it before it dries out.

Get those two things right and you'll have the coziest loaf on the counter all season.

Why You'll Love This Pumpkin Pound Cake

This loaf hits the sweet spot between pound cake and pumpkin bread. It's the one I reach for when I want something simple and satisfying.

  • Dense, buttery crumb. A real pound cake texture, tight and tender, not fluffy like a layer cake.
  • Actually moist. Sour cream and pumpkin keep it soft for days.
  • One bowl, one loaf pan. No bundt pan, no fuss.
  • Thin spiced glaze. Just enough sweetness on top without turning it into frosting.
  • Great for gifting. It slices clean and travels well.

Ingredients You'll Need

Two simple parts: the pound cake batter and a quick glaze.

For the pumpkin pound cake:

  • All-purpose flour (1 ½ cups). The structure. Spoon and level it so the loaf isn't dry.
  • Baking powder (1 teaspoon). A little lift so it's tender, not leaden.
  • Pumpkin pie spice (2 teaspoons). All the warm fall flavor in one scoop.
  • Salt (½ teaspoon). Keeps the sweetness in check.
  • Butter (½ cup), room temperature. Creaming it well is the whole secret to the crumb.
  • Granulated sugar (¾ cup) and brown sugar (½ cup). Brown sugar adds a deeper, caramel note.
  • Eggs (3 large), room temperature. They build the dense pound cake structure.
  • Pumpkin puree (¾ cup). Pure pumpkin, not pumpkin pie filling.
  • Sour cream (¼ cup). The moisture that keeps it soft for days.
  • Vanilla (2 teaspoons). Rounds out the spice.

For the thin glaze:

  • Powdered sugar (¾ cup). The base of the drizzle.
  • Milk (1 to 2 tablespoons). Thin it to a pourable glaze.
  • Cinnamon (a pinch). A little warmth and color.

How to Make Pumpkin Pound Cake

This comes together in one bowl with a hand mixer. Take your time on the creaming step and the rest is easy.

Cream the Butter and Sugar

Heat the oven to 325°F and grease a 9x5-inch loaf pan.

Beat the butter, granulated sugar, and brown sugar together for 3 to 4 minutes, until pale and fluffy.

This is where the tender crumb comes from, so don't rush it.

Add Eggs, Pumpkin, and Dry Ingredients

Beat in the eggs one at a time, then mix in the pumpkin puree, sour cream, and vanilla.

Whisk the flour, baking powder, pumpkin pie spice, and salt in a separate bowl.

Fold the dry ingredients in just until no streaks remain. Overmixing makes it gummy.

Bake the Loaf

Scrape the batter into the pan and smooth the top.

Bake at 325°F for 55 to 65 minutes, until a toothpick in the center comes out clean.

Cool in the pan for 15 minutes, then turn it out onto a rack to cool completely.

Make the Glaze and Finish

Whisk the powdered sugar, milk, and cinnamon into a smooth, pourable glaze.

Drizzle it over the fully cooled loaf and let it set before slicing.

Tips for the Best Pound Cake

  • Room temperature everything. Butter, eggs, and sour cream should sit out for an hour so they cream and blend smoothly.
  • Cream the butter well. Three to four full minutes. This is the "secret" to a good pound cake crumb.
  • Don't overmix the flour. Fold just until combined, or the loaf turns dense and gummy.
  • Don't overbake. Pull it the moment a toothpick comes out clean. A dry pound cake is a sad pound cake.
  • Glaze when cool. A warm loaf melts the glaze right off.

Variations

  • Bundt pan. Double the recipe and bake in a bundt for about 55 to 65 minutes.
  • Brown butter glaze. Brown a couple tablespoons of butter and whisk it into the glaze for a nutty upgrade.
  • Add-ins. Fold in ½ cup chopped pecans or chocolate chips before baking.
  • Cream cheese glaze. Beat a little softened cream cheese into the glaze for tang.

Make-Ahead and Storage

  • Counter. Wrapped well, it keeps 3 to 4 days and stays moist.
  • Refrigerator. Up to 1 week, though it's best at room temperature.
  • Freezer. Wrap the unglazed loaf tightly and freeze up to 3 months. Thaw, then glaze.

Frequently Asked Questions

What is the secret to a good pound cake?

Three things: room-temperature ingredients, creaming the butter and sugar until fluffy, and not overbaking. That combination gives you the dense but tender crumb pound cake is known for.

Can I make this in a bundt pan instead?

Yes. Double the recipe to fill a standard bundt pan and bake about 55 to 65 minutes, testing with a toothpick.

Why is my pound cake dense or gummy?

Usually overmixed flour or undermixed butter. Cream the butter and sugar well, then fold the flour in just until it disappears.

Can I use pumpkin pie filling instead of puree?

No. Pie filling is pre-sweetened and spiced, so it changes the balance and moisture. Use the can labeled 100% pure pumpkin.
