Bright Mediterranean Chickpea Stuffed Sweet Potatoes

Ask most people what goes inside a stuffed sweet potato and you'll hear the same three answers.

Chili. Pulled pork. Something with melted cheese on it.

All heavy, all brown, all eaten with a fork and a nap afterward.

This one goes the opposite direction and it took me a while to believe it would work.

Spiced chickpeas roasted until the edges crackle, a lemon tahini sauce poured over while the potato is still hot, and a cold chopped parsley, tomato and cucumber topping added at the last possible second.

The first bite is the sell.

Hot soft flesh, cool sharp sauce running down into it, crunchy raw vegetables on top, all at once.

My wife described it as tasting like a falafel plate that had been rearranged, which is about right.

I started making it on meatless nights in July when the beef version sounded like too much.

Now it's in the rotation year round, mostly because the sauce is so good I make a double batch for the week.

There's no feta in it and no cheese at all, which surprises people.

It doesn't need any, and I'll explain exactly why further down.

Everything roasts on one sheet pan, the sauce takes four minutes in a bowl, and dinner lands in about 45 minutes.

Make it once in warm weather and you'll see what I mean!

Why You'll Love This Recipe

Three components, all made separately, all keeping separately. That is unusual for a dinner recipe and it makes this one enormously flexible.

  • One sheet pan. The potatoes and the chickpeas roast together at the same temperature for the same time.
  • No meat and no dairy, and it still fills you up. A whole sweet potato plus a full can of chickpeas is a serious amount of food.
  • The sauce is a keeper. ⅓ cup of tahini makes enough for the potatoes plus a week of putting it on other things.
  • About 45 minutes. Roughly 15 hands on, 30 in the oven.
  • Hot, cold and crunchy in one bite. Most stuffed potatoes are soft on soft. This isn't.
  • Great cold the next day. Not something I'd say about a chili stuffed potato.

Hot, Cold, Bright: How This One Is Built

The design of this dish is a temperature contrast, not a flavor pile. Every layer has a specific job and pulling one out makes the rest fall over.

  • The hot roasted potato. Sweetness and body. Roasted cut side down, the flat face caramelizes and goes almost jammy.
  • The spiced chickpeas. Salt, spice and chew. Roasted until the outsides crackle and the insides stay creamy.
  • The lemon tahini sauce. Fat and acid together, poured on cold so it stays sharp against the hot flesh.
  • The raw topping. Cold crunch and fresh herb. This is the layer that stops the whole plate from tasting soft.

So why is there no feta?

Because the tahini is already the rich, savory, creamy element here, and adding cheese on top of it makes two things compete for the same job.

You lose the lemon, and the plate goes heavy again.

That's the version I was trying to get away from.

Ingredients You'll Need

Nothing exotic, but the tahini is worth a moment of thought. Buy one that pours like heavy cream, not one that's set like concrete under an inch of oil.

  • Sweet potatoes (4 medium). Around 8 to 10 ounces each. They get halved lengthwise, not baked whole.
  • Chickpeas (1 15-ounce can), drained. Canned is genuinely fine here. Dried work too if you cook them until fully tender first.
  • Olive oil (3 tablespoons). Split between the potatoes and the chickpeas. Chickpeas need enough to crisp.
  • Ground cumin (1 teaspoon). The base note of the spice mix.
  • Ground coriander (1 teaspoon). Citrusy and floral. This is the spice that makes it read Mediterranean rather than Tex-Mex.
  • Smoked paprika (1 teaspoon). Color and a little smoke behind the lemon.
  • Tahini (⅓ cup). The whole sauce. Stir the jar thoroughly before measuring.
  • Lemons (2). You need 4 tablespoons of juice total across the sauce and the topping, plus wedges for the table.
  • Garlic (1 clove), grated. Raw, into the sauce. Grate it on a microplane so there are no chunks.
  • Dried dill (1 teaspoon). Dried genuinely works better than fresh in a tahini sauce, it disperses evenly.
  • Flat leaf parsley (1 cup), chopped. A real cup, not a garnish sprinkle. It's a salad component here.
  • Cherry tomatoes (1 cup), halved. Sweet and acidic, and they hold up better than a big beefsteak.
  • Cucumber (½ cup), diced small. My addition. It's the crunch the competitors leave out.
  • Red onion (¼ cup), finely chopped. Soaked in lemon juice first to take the raw edge off.
  • Kosher salt and black pepper. Season every component separately, not just at the end.

How to Roast the Sweet Potatoes and Chickpeas

Both go on the same sheet pan at the same temperature, which is the reason this comes together so fast. Heat the oven to 425°F.

Scrub the potatoes and halve them lengthwise.

Rub the cut faces with olive oil and kosher salt, then lay them cut side DOWN on one half of a sheet pan.

Cut side down matters. It's what gives you the browned, caramelized flat face instead of a pale steamed one.

Drain and rinse the chickpeas, then roll them dry in a towel.

Properly dry. A wet chickpea steams in the oven and stays soft, no matter how long you leave it in there.

Toss them with the remaining olive oil, the cumin, coriander, smoked paprika, salt and pepper, and spread them in a single layer on the other half of the pan.

Roast 25 to 30 minutes, until a skewer slides easily into the thickest part of the potatoes and the chickpeas rattle when you shake the pan.

How to Make the Lemon Tahini Sauce

Four minutes in a bowl, and one moment in the middle that scares everybody the first time. Read the second step before you start.

Step 1: Whisk the Tahini, Lemon and Garlic

Put the tahini, 3 tablespoons lemon juice, the grated garlic, dried dill and salt in a small bowl.

Whisk it together.

Step 2: Add Cold Water and Push Through the Seize

The mixture will immediately go thick, pale and grainy, like wet cement.

You have not ruined it. This happens every single time and it's just the tahini emulsifying.

Add cold water 1 tablespoon at a time, whisking hard after each addition.

Somewhere around 4 tablespoons it loosens all at once and turns smooth, pale and glossy.

Step 3: Season and Thin to a Pouring Consistency

Keep adding water, up to about 6 tablespoons total, until it pours off the whisk in a ribbon.

Taste and add salt and a little more lemon.

It should taste too lemony on a spoon, because it's about to land on a sweet potato.

The Raw Parsley Topping

Build this last, and I mean last. Made an hour early, the tomatoes weep and the parsley goes limp and dark.

Put the chopped red onion in a bowl with 1 tablespoon lemon juice and a pinch of salt and leave it for 5 minutes.

That short soak takes the harsh raw bite out and softens the color slightly.

Add the chopped parsley, halved cherry tomatoes and diced cucumber and toss.

Chop everything to roughly the same small size so you get all of it in a single forkful.

How to Assemble

Order matters here, and it's the same order every time. Work fast so the potato is still hot when the sauce hits it.

Set two roasted halves on each plate, cut side up.

Fluff the flesh with a fork and press a shallow trough down the middle of each.

Season the exposed flesh with a pinch of salt. Sweet potato needs it and nobody remembers to do it.

Spoon the roasted chickpeas into the trough.

Pour the lemon tahini sauce over the top so it runs down into the flesh.

Add the raw parsley topping last, and finish with a squeeze of lemon from a wedge.

Tips for the Best Chickpea Stuffed Sweet Potatoes

Every one of these is something I got wrong at least once. They're all small and they all matter.

  • Dry the chickpeas properly. Roll them in a clean towel until they squeak. This is the single biggest factor in whether they crisp.
  • Buy pourable tahini. A stiff, bitter, separated jar makes a stiff, bitter sauce. Ethiopian or Lebanese brands are usually a safe bet.
  • Grate the garlic, don't chop it. Raw garlic chunks in a smooth sauce are unpleasant little landmines.
  • Salt the exposed flesh. A pinch on the cut face at assembly time changes the whole plate.
  • Taste the sauce twice. Once when it's thick, once when it's thinned. Water dilutes the seasoning and it always needs more salt at the end.
  • Roast cut side down. Cut side up gives you a dry, pale face and you lose the caramelization completely.

Variations

The three part structure takes swaps well. Change one layer at a time and you'll always land somewhere good.

  • Harissa chickpeas. 1 tablespoon of harissa paste in with the oil and spices, for real heat.
  • A layer of hummus. Spread it on the potato flesh before the chickpeas go in. Rich and very good.
  • Olives or preserved lemon. Chopped small into the raw topping. Salty, sharp, extremely Mediterranean.
  • Mint with the parsley. Swap in ¼ cup of chopped mint. Cools it down even further.
  • A fried egg on top. Turns it into a bigger, brunch shaped meal. The runny yolk is fantastic with the tahini.

Make Ahead and Storage

Three components, three different storage lives, and only one of them has to be made fresh. This is the most meal prep friendly dish I make.

  • The tahini sauce. 1 week in a jar in the fridge. It thickens as it sits, so whisk in a splash of cold water before using.
  • The roasted chickpeas. 3 days in a loosely covered container, never airtight, or they go soft. Re crisp them in a hot dry skillet for 2 minutes.
  • The roasted potatoes. 3 days in the fridge. Reheat cut side down in a skillet or at 375°F for 15 minutes.
  • The raw topping. Make it fresh. It's a five minute job and it does not survive overnight.
  • Freezing. Skip it. The sauce splits and the potato flesh turns stringy.

Bright Mediterranean Chickpea Stuffed Sweet Potatoes

Ingredients

For the Potatoes and Chickpeas

  • 4 medium sweet potatoes halved lengthwise
  • 1 15-ounce can chickpeas drained, rinsed and dried well
  • 3 tablespoons olive oil divided
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

For the Lemon Tahini Sauce

  • ⅓ cup tahini well stirred
  • 3 tablespoons lemon juice fresh
  • 1 clove garlic grated
  • 1 teaspoon dried dill
  • ¼ teaspoon kosher salt
  • 4 to 6 tablespoons cold water added gradually

For the Raw Topping

  • 1 cup flat leaf parsley chopped
  • 1 cup cherry tomatoes halved
  • ½ cup cucumber diced small
  • ¼ cup red onion finely chopped
  • 1 tablespoon lemon juice

Instructions

Roast the Potatoes and Chickpeas

  • Heat the oven to 425 degrees F. Scrub the sweet potatoes and halve them lengthwise.
  • Rub the cut faces with 1 tablespoon of the olive oil and a pinch of salt and lay them cut side DOWN on one half of a sheet pan.
  • Drain and rinse the chickpeas and roll them dry in a clean towel until they squeak. Wet chickpeas steam instead of crisping.
  • Toss the dry chickpeas with the remaining 2 tablespoons olive oil, the cumin, coriander, smoked paprika, salt and pepper. Spread them in a single layer on the other half of the pan.
  • Roast 25 to 30 minutes, until a skewer slides easily into the thickest part of the potatoes and the chickpeas rattle when you shake the pan.

Make the Lemon Tahini Sauce

  • Whisk the tahini, 3 tablespoons lemon juice, grated garlic, dried dill and salt together in a small bowl. The mixture will seize into a thick pale paste. This is normal.
  • Add cold water 1 tablespoon at a time, whisking hard after each addition. Around 4 tablespoons it loosens and turns smooth and glossy.
  • Keep going up to about 6 tablespoons total, until the sauce pours off the whisk in a ribbon. Taste and add salt and lemon, it should taste too lemony on its own.

Topping and Assembly

  • Put the chopped red onion in a bowl with 1 tablespoon lemon juice and a pinch of salt and leave 5 minutes. Add the parsley, cherry tomatoes and cucumber and toss.
  • Set two roasted potato halves on each plate cut side up. Fluff the flesh with a fork, press a shallow trough down the middle and season the exposed flesh with salt.
  • Spoon the roasted chickpeas into the trough, pour the lemon tahini sauce over so it runs down into the flesh, and add the raw parsley topping last.
  • Finish with a squeeze of lemon from a wedge and serve immediately while the potato is still hot.

  • Storage: Sauce keeps 1 week, chickpeas 3 days loosely covered, potatoes 3 days. Do not freeze.
