Every year there's a small group at my Thanksgiving table who politely skip the pumpkin pie. You know the ones.
So I built the pie that wins them over. Turns out the trick was chocolate.

This pumpkin chocolate silk pie has two silky layers. A rich chocolate silk on the bottom, a tangy pumpkin cream cheese silk on top, all sitting in a chocolate cookie crust. The chocolate carries the pumpkin instead of competing with it, and suddenly the skeptics are asking for the recipe.
Best part: it's completely no-bake. No oven, no water bath, and no raw eggs (a lot of French silk recipes lean on those, and I'd rather not). The chocolate layer gets its silk from melted chocolate folded into a cream cheese and whipped cream base. Foolproof.
It slices into clean, two-tone wedges that look like they came from a bakery case. Make it the day before, and it's one less thing to think about when the house fills up.

This is the pumpkin dessert for people who think they don't like pumpkin dessert. The chocolate does most of the work.

Ingredients You'll Need

- Semisweet or dark chocolate (4 oz). Melted and cooled. This is the soul of the chocolate silk layer.
- Cream cheese (12 oz total). Split between the two layers for that silky, sliceable, faintly tangy set.
- Powdered sugar. Sweetens both silk layers without any graininess.
- Heavy cream + whipped topping. Whipped cream lightens the chocolate layer; whipped topping folds into the pumpkin layer.
- Pumpkin puree (1 cup). Use pure canned pumpkin, NOT pie filling.
- Pumpkin pie spice (2 teaspoons). All the warm fall flavor in one jar.
- Chocolate curls or shavings. For the top, along with a little whipped cream.

How to Make Pumpkin Chocolate Silk Pie
You build it in layers, chilling as you go. None of the steps are hard, they just need a little patience between them.
Step 1: Make the chocolate cookie crust
Stir the chocolate cookie crumbs with the melted butter until it looks like wet sand. Press firmly into a 9-inch pie dish, up the sides too. Chill it for at least 20 minutes to set while you make the fillings.
Step 2: Make the chocolate silk layer
Beat 4 oz cream cheese with the powdered sugar until smooth, then beat in the melted and cooled chocolate. Fold in the freshly whipped heavy cream until silky. Spread it evenly over the crust and chill for 20 minutes so it firms before the next layer.
Step 3: Make the pumpkin silk layer
Beat the remaining 8 oz cream cheese with powdered sugar until smooth. Add the pumpkin puree and pumpkin pie spice and beat until combined. Gently fold in the whipped topping. Spread this over the chilled chocolate layer.
Step 4: Top and chill
Swirl a little whipped cream over the top and scatter chocolate curls. Chill the whole pie for at least 4 hours, or overnight, until fully set and sliceable.
The Best Crust for a Silk Pie
A silk pie lives and dies by a crust that holds together when you cut it.
- Chocolate cookie crumb. My pick here. It deepens the chocolate and gives great contrast against the pale pumpkin layer.
- Gingersnap or graham. Both work if you want a spicier or more neutral base.
- Press firmly and chill. A loosely packed crust crumbles. Pack it hard and let it set cold.

Expert Tips
A few small things separate a clean, two-tone slice from a muddy one.
- Cool the chocolate first. Warm melted chocolate will deflate the whipped cream. Let it come to room temperature.
- Use good chocolate. Semisweet or dark. The silk layer tastes like whatever bar you melt.
- Chill between layers. A firm chocolate layer keeps the pumpkin layer from bleeding into it, so you get crisp two-tone wedges.
- Warm the knife. Run it under hot water and wipe it between cuts for clean edges.

Storage and Make-Ahead
This is a plan-ahead dessert, which is exactly why I love it for the holidays.
- Refrigerator. Cover and keep for 3 to 4 days.
- Make ahead. Assemble up to 2 days before serving and keep chilled.
- Freezer. Freeze up to 1 month, well wrapped. Thaw overnight in the fridge before serving.

Ingredients

Instructions
Make the Crust
