Pumpkin Meringue Pie

I'll admit something that might get me in trouble at Thanksgiving.

Plain pumpkin pie has always felt a little flat to me.

The custard is lovely, but that bare amber top never gave me much to get excited about.

Then one year I whipped up a batch of meringue and piled it on.

Everything changed.

A tall, swirled cloud of toasted meringue turns that same familiar custard into a showstopper.

The top goes golden and marshmallow-y under the broiler.

Underneath, the pumpkin stays smooth, cool, and gently spiced.

My wife took one look at it and said it belonged in a bakery window.

The best part is how easy the meringue is once you know the trick.

You spread it onto the warm filling so it seals to the crust and won't slide.

A few minutes of toasting and you have a pie people photograph before they eat it.

Ingredient Notes

A short list of pantry staples does all the work here.

  • Pumpkin puree (1 can, 15 oz). Use plain pumpkin puree, not pie filling, which is pre-sweetened and spiced.
  • Evaporated milk (1 can, 12 oz). Gives the custard its classic silky set.
  • Eggs (3 large) plus egg whites (4). Whole eggs firm the custard; the whites become the meringue.
  • Granulated sugar. Sweetens both the filling and the glossy meringue.
  • Cream of tartar (¼ tsp). A little stabilizer keeps the meringue tall and prevents weeping.
  • Warm spices. Cinnamon, nutmeg, and a pinch of cloves.
  • Pie crust (1 single, 9-inch). Homemade or store-bought both work.

How to Make Pumpkin Meringue Pie

Build it in three parts. Crust and custard first, meringue last.

Step 1: Par-Bake the Crust

Fit the crust into a 9-inch pie dish and crimp the edge.

Prick the bottom, line with parchment, and add pie weights.

Bake at 425°F for 15 minutes, until the edge just colors. Cool briefly.

Step 2: Mix and Bake the Custard

Whisk the pumpkin puree, whole eggs, granulated sugar, evaporated milk, vanilla, and spices until smooth.

Pour into the crust.

Bake at 425°F for 15 minutes, then reduce to 350°F and bake 30 to 35 minutes, until the center barely jiggles.

Step 3: Whip and Toast the Meringue

Beat the egg whites and cream of tartar to soft peaks, then add the sugar a spoonful at a time until glossy and stiff.

Spread it over the still-warm filling, mounding it high and sealing it to the crust edge.

Swirl the top into peaks, then toast under the broiler for 1 to 2 minutes or with a kitchen torch.

Watch it closely, because the peaks brown fast.

Cool before slicing.

Tips for a Perfect Meringue

A tall, stable meringue comes down to a few habits.

  • Spread it on WARM filling. This seals the meringue to the custard and crust so it won't slide or weep.
  • Seal to the crust edge. Take the meringue all the way to the pastry so there's no gap for it to shrink from.
  • No torch? Use the broiler. A minute or two on high toasts the peaks just as well. Keep the oven door cracked and watch it.
  • Use clean, grease-free bowls. Any fat keeps the whites from whipping tall.

Storage and Make-Ahead

Meringue pies are happiest the day they're made. Here's how to hold leftovers.

  • Refrigerator. Chill loosely covered up to 2 days. The meringue softens over time but stays tasty.
  • Make-ahead. Bake the custard portion a day ahead, then add and toast the meringue before serving.
  • Slicing. Wipe the knife between cuts for clean slices through the meringue.

Ingredients

For the Pumpkin Custard

  • 1 9-inch pie crust unbaked, homemade or store-bought
  • 1 15 oz can pumpkin puree not pie filling
  • 3 large eggs
  • ¾ cup granulated sugar
  • 1 12 oz can evaporated milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt

For the Meringue

  • 4 large egg whites room temperature
  • ½ cup granulated sugar
  • ¼ teaspoon cream of tartar
  • ½ teaspoon vanilla extract

Instructions

Par-Bake the Crust

  • Fit the crust into a 9-inch pie dish and crimp the edge. Prick the bottom, line with parchment, and add pie weights.
  • Bake at 425 degrees F for 15 minutes, until the edge just colors. Cool briefly.
