Somewhere in St. Louis in the 1930s, a baker reached for the wrong ingredient.
He was making a batch of cake batter and mixed up the proportions of butter and flour.

The result was too gooey to be a proper cake.
Nobody threw it out.
They sold it, people loved it, and gooey butter cake became a St. Louis legend that's still baked in home kitchens today.
I turned that happy accident into pumpkin bars, and I don't think I'll ever go back to plain.
You get a soft, chewy cake-mix crust on the bottom.
On top of it sits a custardy pumpkin cream cheese layer that stays gooey in the middle.
A cracked dusting of powdered sugar finishes the whole thing.
I bring these to every fall potluck, and the pan comes home empty every time.
They're the kind of bar that gets one person quietly going back for a second before anyone's had a first.
What I love most is how easy they are. A box of cake mix does half the work, and the rest is one bowl. Make them once and you'll get why they've lasted almost a hundred years.
What Are Gooey Butter Bars?
Gooey butter cake is a true St. Louis original. Born from that 1930s kitchen mix-up, it's built on two layers that do very different jobs.
The bottom is a soft, dense crust, almost like a chewy blondie.
The top is a rich, custardy filling that sets around the edges but stays gooey in the center.
My pumpkin version swaps in pumpkin puree and warm spice, so it eats like the lovechild of a butter bar and a slice of pumpkin cheesecake.

Ingredients You'll Need
Two quick layers, and a box of cake mix does the heavy lifting on the crust.
- Yellow cake mix (1 box, 15.25 oz). The shortcut crust. It bakes into a soft, chewy base.
- Egg (1 large, for the crust). Binds the crust dough together.
- Butter (½ cup, melted, for the crust). Turns the dry mix into a pressable dough.
- Cream cheese (8 oz, softened). The body of the gooey filling. Softened is key for a smooth mix.
- Pumpkin puree (1 can, 15 oz). Use 100% pure pumpkin, not pie filling.
- Eggs (3 large, for the filling). They set the custardy layer.
- Butter (½ cup, melted, for the filling). Where the "butter" in gooey butter comes from.
- Vanilla extract (1 teaspoon). Rounds out the spice.
- Powdered sugar (3 ½ cups, plus more for dusting). Sweetens the filling and gives that cracked snowy top.
- Cinnamon (1 teaspoon) and nutmeg (½ teaspoon). The warm fall backbone.

How to Make Pumpkin Gooey Butter Bars
Press a crust, pour a filling, bake. That's genuinely the whole method.
Press the Cake-Mix Crust
Stir the cake mix, 1 egg, and ½ cup melted butter together until a soft dough forms.
Press it evenly into the bottom of a lined 9x13 pan.
Use your fingers or the flat bottom of a measuring cup to get it level.
Mix the Gooey Pumpkin Filling
Beat the softened cream cheese until smooth, then mix in the pumpkin, 3 eggs, melted butter, and vanilla.
Add the powdered sugar, cinnamon, and nutmeg and beat until silky.
Pour the filling over the crust and smooth the top.
Bake Until Just Set
Bake at 350°F for 40 to 50 minutes.
You want the edges set and puffed but the center still with a slight jiggle. That jiggle is the gooey payoff.
COOL completely in the pan before cutting, then dust the top with powdered sugar.

Tips for Perfectly Gooey Bars
The whole game is knowing when to pull them and when to cut them.
- Underbake, just barely. Pull them when the center still jiggles a little. Bake it out fully and you lose the gooey magic to a cakey texture.
- Cool completely. Warm bars are a molten mess. They firm up into neat squares only once fully cooled, so I chill mine for an hour to be safe.
- Warm knife, clean cuts. Run your knife under hot water and wipe it between slices for bakery-sharp squares.
- Dust last. Add the powdered sugar right before serving so it stays bright and doesn't dissolve.

Storage
- Counter. Cover and keep at room temperature for up to 2 days.
- Fridge. Because of the cream cheese, refrigerate for longer storage, up to 5 days in an airtight container.
- Freezer. Freeze cut squares in a single layer, then bag them for up to 2 months. Thaw in the fridge.

Instructions
Make the Crust
- Preheat the oven to 350 degrees F. Line a 9x13-inch pan with parchment.
- Stir the cake mix, 1 egg, and ½ cup melted butter together until a soft dough forms. Press it evenly into the bottom of the pan.
Make the Filling
- Beat the softened cream cheese until smooth. Mix in the pumpkin puree, 3 eggs, ½ cup melted butter, and vanilla.
- Add the powdered sugar, cinnamon, and nutmeg and beat until silky. Pour the filling over the crust and smooth the top.
Bake and Cut
