Pumpkin pie is wonderful until you're standing at a party with a plate in one hand and a fork in the other.

That's the moment these little pies win.

No plate. No fork. No slicing.

Just a flaky, sugar-dusted pocket with a spiced pumpkin center.

I started making them for my kids' lunchboxes, and now they show up at every fall gathering I go to.

They vanish before the sliced pie even gets cut.

The filling is thick and set, so it won't leak or turn the pastry soggy.

Each one gets a fork-crimped edge, a little vent slit, and a toss in cinnamon sugar.

They come out golden, crisp on the edges, and soft in the middle.

My daughter likes to help fold and crimp them, which makes them a fun weekend project.

Why You'll Love These Hand Pies

These turn pumpkin pie into a grab-and-go treat. Here's what makes them a keeper.

  • Totally handheld. Flaky pastry pockets you eat with one hand, no plate or fork needed.

  • Make-ahead friendly. Shape and freeze them raw, then bake a few whenever you want.

Ingredient Notes

You only need a handful of simple things.

  • Pie dough (2 sheets). Store-bought or homemade both work. Cold dough is easier to shape.
  • Pumpkin puree (¾ cup). Use plain pumpkin puree, not pie filling.
  • Brown sugar. Packed brown sugar gives the filling a warm caramel note.
  • Egg yolk plus flour or cornstarch. These thicken the filling so it sets and stays put inside the pocket.
  • Egg (beaten). A quick egg wash for a glossy, golden crust.
  • Pumpkin pie spice. An easy shortcut for all the warm fall spice.
  • Cinnamon sugar. The finishing toss that makes them sparkle.

How to Make Pumpkin Hand Pies

They come together in a few easy steps. Filling, shaping, then baking.

Step 1: Make the Filling

Stir the pumpkin puree, brown sugar, egg yolk, pumpkin pie spice, salt, and flour or cornstarch into a thick, smooth paste.

You want it thick enough to hold its shape on a spoon.

That's what keeps the pies from leaking.

Step 2: Cut and Fill

Roll the dough and cut 3 to 4-inch rounds.

Spoon about 1 teaspoon of filling onto one half of each round.

Don't overfill, or they'll burst in the oven.

Step 3: Fold, Crimp, and Bake

Brush the edges with egg wash, fold each round into a half-moon, and press the edges with a fork to seal.

Cut a small vent slit in the top of each one.

Brush the tops with egg wash and set them on a parchment-lined sheet.

Bake at 375°F for 18 to 22 minutes, until golden and crisp.

Toss the warm pies in cinnamon sugar and let them cool slightly.

Tips for the Best Hand Pies

A few habits keep them sealed and golden.

  • Keep the filling THICK. A loose, runny filling leaks and makes the pastry soggy.
  • Don't overfill. A teaspoon per pie is plenty. Too much and they blow out.
  • Seal well and vent. A fork-crimped edge plus a vent slit lets warmth escape without bursting.
  • Work with cold dough. Chilled pastry holds its shape and bakes up flakier.

Storage and Freezing

These keep and freeze beautifully. Bake a few at a time straight from the freezer.

  • Counter. Store in an airtight container up to 2 days.
  • Refrigerator. Keeps up to 4 days. Re-crisp in a warm oven for a few minutes.
  • Freezer. Freeze shaped, unbaked pies on a tray, then bag them up to 2 months. Bake from frozen, adding a few minutes.

Variations

The base is easy to dress up.

  • Pumpkin cream cheese. Beat a couple ounces of cream cheese into the filling for a cheesecake vibe.
  • Maple glaze. Skip the cinnamon sugar and drizzle a simple maple glaze on the cooled pies.
  • Salted caramel. Tuck a tiny dab of thick caramel in with the pumpkin before sealing.
