Trifles get treated like a summer thing.
Strawberries, pound cake, a garden party in June.

I decided that was a waste of a perfectly good glass bowl.
So one October I swapped the berries for spice cake and a pumpkin cheesecake cream, and the whole thing turned into a fall showpiece.
Now it's the dessert I bring when I'm feeding a crowd and don't want to babysit an oven.
I assemble it the night before, stick it in the fridge, and pull it out looking like I fussed for hours.
My mother-in-law asked for the recipe the first time she saw those layers through the glass.
It's spice cake, a creamy pumpkin cheesecake layer, and softly whipped cream, stacked tall and finished with crushed gingersnaps.
Every spoonful pulls a little of each layer.
It tastes like pumpkin pie got lighter and a lot more fun. Give it a try and watch it disappear.
What Is a Trifle?
A trifle is just layers of cake, cream, and something flavorful in a clear glass bowl. The glass is the whole point.
You see every stripe from the side, which is why it looks so impressive for almost no effort.
There's no baking the whole thing together and no fancy technique.
You make the parts, then stack them. That's it.

Ingredients You'll Need
Three simple layers, and most of it comes from the store. Here's what goes into each one.
- Spice cake (1 box mix). Baked and cooled, then cubed. The warm spice does a lot of the flavor work for you.
- Cream cheese (two 8 oz packages). Softened to room temperature so it whips up smooth with no lumps.
- Pumpkin puree (one 15 oz can). Use pure pumpkin puree, NOT pumpkin pie filling. The filling is pre-sweetened and will throw everything off.
- Brown sugar (1 cup, packed). Sweetens the pumpkin layer with a little caramel depth.
- Pumpkin pie spice (3 teaspoons). The warm backbone: cinnamon, nutmeg, ginger, cloves.
- Vanilla extract (2 teaspoons). Rounds out both the pumpkin layer and the cream.
- Salt (⅛ teaspoon). A tiny pinch that keeps it from tasting flat.
- Heavy whipping cream (16 oz). Whipped fresh with powdered sugar. Cold cream whips best.
- Powdered sugar (⅓ cup). Sweetens the whipped cream without any grit.
- Gingersnaps (4-5, crushed). For the top and between layers. Toffee bits or walnuts work too.
How to Make Pumpkin Trifle
You'll make three things, then layer them. None of it is hard, and you can even bake the cake a day early.
Step 1: Bake and cube the cake
Bake the spice cake according to the box, then let it cool completely.
Cut it into 1-inch cubes. Day-old cake actually holds up better in the layers.
Step 2: Make the pumpkin cheesecake layer
Beat the softened cream cheese and brown sugar until smooth.
Add the pumpkin puree, pumpkin pie spice, vanilla, and salt, and beat until creamy.
Step 3: Whip the cream
In a cold bowl, whip the heavy cream and powdered sugar to soft, billowy peaks.
Fold about a cup of it into the pumpkin layer to lighten it up. Save the rest for the top.
Step 4: Layer it up
Start with a layer of cake cubes in the bottom of a glass trifle bowl.
Spoon on some pumpkin cream, then whipped cream, then a sprinkle of gingersnaps.
Repeat the layers until you reach the top, finishing with whipped cream and crushed gingersnaps.
Step 5: Chill
Cover and refrigerate for at least 2 hours, or overnight.
The chill lets the cake soak up a little of the cream and the flavors settle together.

Tips for the Best Pumpkin Trifle
A trifle is easy, but a few things make it look and taste its best.
- Push layers to the glass. Spoon each layer against the wall of the bowl so the stripes show clean from the outside.
- Use cold cream. Heavy cream whips faster and holds better when it's straight-from-the-fridge cold.
- Fold, don't stir. Folding whipped cream into the pumpkin keeps it light and airy instead of dense.
- Puree, not pie filling. Check the label twice. Plain pumpkin puree only.
- Let it chill. Even a couple hours makes the layers meld and the cake soften just right.

Topping and Layering Ideas
The crunch layer is where you can have fun. Swap in whatever you love.
- Gingersnaps. My favorite. That spicy snap against the creamy layers is hard to beat.
- Toffee bits. Buttery and sweet, they add a little candy crunch.
- Chopped walnuts or pecans. A nutty, toasty bite for texture.
- Caramel drizzle. A thin ribbon over the top layer for extra decadence.
Storing and Making Ahead
This dessert is built for making ahead. It only gets better after a rest in the fridge.
- Make-ahead. Assemble it up to a day early and keep it covered in the fridge.
- Storage. Leftovers keep 2 to 3 days, covered. The cake softens more over time, which I don't mind at all.
- Individual servings. Layer the trifle in glasses or small jars for a party-ready single-serve option.

Frequently Asked Questions
What exactly is a trifle?
It's a layered dessert of cake, cream, and a flavored filling, assembled in a clear glass bowl so you can see the layers. No baking the whole thing together, just stacking.
Can I make pumpkin trifle ahead of time?
Yes, and I recommend it. Assemble it a few hours to a full day ahead and chill it covered. The flavors settle and the cake softens beautifully.
Pumpkin puree or pumpkin pie filling?
Always plain pumpkin puree. Pie filling is pre-sweetened and pre-spiced, which will make the trifle too sweet and throw off the balance.
Can I make individual pumpkin trifles?
Absolutely. Layer everything in stemless wine glasses, mason jars, or small dessert cups for a party-friendly single-serve version.
How long does it keep?
Covered in the fridge, it's good for 2 to 3 days. It won't last that long in my house.
Can I use store-bought cake or whipped topping?
Yes. A store-bought pound cake or angel food cake works, and frozen whipped topping is a fine shortcut if you're short on time.
