Pumpkin Galette

I gave up fighting with pie crust a few years ago.

The crimping, the blind baking, the shrinking edges that slide down the pie plate every time.

One fall afternoon I just rolled the dough into a rough circle, piled pumpkin filling in the middle, and folded the sides up over the edges.

No pie plate. No fussy crimp. No stress.

It came out of the oven looking rustic and golden, and it tasted exactly like pumpkin pie.

That was the last time I made a proper pumpkin pie.

A galette is basically a lazy pie, and I mean that as the highest compliment.

You get the same creamy spiced pumpkin filling and the same buttery, flaky crust, just folded flat on a sheet pan instead of fitted into a dish.

The uneven pleats and the imperfect circle are the whole charm.

My family actually prefers it now, because every slice gets a generous share of that sugared, crackly folded edge.

It's the dessert I bring when I want something that looks like I tried harder than I did.

Roll it once and you'll see why I never went back.

What Is a Galette?

A galette is a free-form pie baked flat with no pan. You roll the dough into a rough round, spread the filling in the center, and fold the edges up and over.

That's the entire technique.

The folded border holds the filling in while the whole thing bakes right on a sheet pan.

Rustic and imperfect is exactly the look you want.

Why You'll Love This Pumpkin Galette

This is the easiest way to get pumpkin-pie flavor onto your table. No pie plate, no blind baking, no crimping.

  • Simpler than pie. You skip the pie dish and the fussy edge work entirely.
  • Same cozy flavor. Creamy spiced pumpkin custard in a buttery, flaky crust.
  • Built-in crust in every slice. That folded, sugared edge means everyone gets some.
  • Looks impressive. Rustic galettes photograph beautifully with almost no effort.

What's not to love?

Ingredients You'll Need

The whole thing comes from basic baking-aisle staples. Two things matter most: keep the butter cold, and use pure pumpkin, not the pre-spiced pie filling.

For the crust

  • All-purpose flour (1 ¼ cups). The base of a tender, flaky galette dough.
  • Granulated sugar (1 tbsp). Just enough for a lightly sweet crust.
  • Salt (½ tsp). Balances the sweet filling.
  • COLD unsalted butter (½ cup, cubed). Cold butter is what gives you flaky layers.
  • Ice water (3-4 tbsp). Add a tablespoon at a time until the dough just holds.

For the pumpkin filling

  • Pumpkin puree (1 cup). Pure pumpkin only, not pie filling.
  • Light brown sugar (⅓ cup, packed). A deeper, warmer sweetness.
  • Egg (1 large). Sets the filling into a sliceable custard.
  • Heavy cream (3 tbsp). Makes the filling smooth and rich.
  • Vanilla extract (1 tsp). Rounds out the spice.
  • Pumpkin pie spice (1 ½ tsp). Or mix your own cinnamon, ginger, nutmeg, and cloves.
  • Salt (¼ tsp). Wakes everything up.

To finish: one beaten egg for the wash and a tablespoon of coarse sugar for the crust.

How to Make a Pumpkin Galette

The method is roll, fill, and fold. That's genuinely all there is to it.

Make the crust

Cut the cold butter into the flour, sugar, and salt until you have coarse crumbs.

Add ice water a spoonful at a time until the dough just holds together.

Shape it into a disc, wrap it, and chill for at least 30 minutes.

Make the filling

Whisk the pumpkin, brown sugar, egg, cream, vanilla, spice, and salt in one bowl until smooth.

Keep it thin and pourable. A shallow filling sets properly in a free-form galette.

Assemble and bake

Roll the chilled dough into a rough 12-inch circle on parchment.

Spread the filling in the center, leaving a 2-inch border all around.

Fold and pleat the border up over the edge of the filling, then brush the crust with egg wash and sprinkle with coarse sugar.

Bake at 375°F for 35 to 45 minutes, until the crust is deep golden and the filling is set.

Tips for Success

A few small moves keep the crust flaky and the bottom crisp.

  • Keep the butter COLD. If the dough softens while you work, chill it again before baking.
  • Spread the filling thin. A deep pile weeps and won't set. A shallow layer bakes through cleanly.
  • Bake on parchment. It keeps the bottom from sticking and makes cleanup easy.
  • Don't skip the egg wash and sugar. That's what gives the folded edge its golden, sparkly finish.

Variations

The base recipe takes happily to a few add-ins.

  • Apple pumpkin. Fan a few thin apple slices over the filling before folding.
  • Caramel drizzle. A little salted caramel over the cooled galette is a crowd-pleaser.
  • Extra spice. Bump the pumpkin pie spice up to 2 teaspoons if you like it bold.

Serving Suggestions

This galette is made for a scoop of something cold on top.

  • Whipped cream. A soft dollop on each warm slice.
  • Vanilla ice cream. The classic pairing, and my personal favorite.
  • Powdered sugar. A light dusting for a simple, pretty finish.

Storing and Reheating

Leftovers keep well, which makes this a great make-ahead dessert.

  • Room temp. Cover and leave out for up to a day.
  • Fridge. Store in an airtight container for 3 to 4 days.
  • Reheat. Warm slices in a 325°F oven for a few minutes to re-crisp the crust.

Ingredients

For the Crust

  • 1 ¼ cups all-purpose flour

Instructions
